Proof Bread

The original founder of Proof, Jared Allen, pioneered sourdough baking in the humblest of ways through hand mixing, artistry, and the original example of perseverance working within impossible old-world standards, completely devoid of air conditioning, fancy equipment, and systems customary in more streamlined bakery operations.

The Allen’s time with Proof was special. They were a huge family—now consisting of eight children—and many of the kids grew up with their dad working on the beginnings of Proof in their garage, just north of Pioneer Park on Pioneer Drive in Mesa, less than a mile from the current bakery.

Jon and Amanda, the current owners of Proof, were originally loyal customers during Allen’s time and were far from alone; many of our current long-time customers have been supporting Proof for nearly a decade now.

Vampire Penguin Shaved Snow

Brothers who grew up in the Philippines, where we loved ice candy — our version of otter pops — a treat that’s been close to our hearts ever since. When we moved to the U.S. in 2000, we discovered all kinds of frozen desserts: snow cones, Hawaiian shaved ice, and Taiwanese shaved ice.

We chose Penguin for its connection to ice, and Vampire for that unexpected, otherworldly twist that made our shaved snow unlike anything else. When we shared the idea with our friend Kathleen, she brought our quirky vision to life by sketching the original mascot — and just like that, the story, characters, and world of Vampire Penguin were born.

Kamikaze

From Midwest Nice, To Southwest Spice

We moved here in 2013 and immediately fell in LOVE with the spice of Southwestern cuisine, but still missed our favorite foods from home. We combined a little of our favorite hometown Asian food, with a LOT of Green Chile, fried it all up, and Kamikaze was born. You can always expect “Fresh Cut” and “Scratch Made” from us. Feel free to follow along on our Fusion Food Truck journey and enjoy some tasty treats like our Mother Klucker, Wonton Nachos or our viral Eggroll-arito!
